Recipe: Nana's Apple Cake

Just go ahead and throw out your current recipe. Trust me...this is better

My mother-in-law is a bit of a baking celebrity in her community.  So when she offered up this recipe for the site, I jumped on it because the world needs more of this cake! She has been making this exact recipe for at least 25 years and it even won her 1st place in a bake-off here in Savannah!

Nana's Apple Cake

Mix together well:

2 cups sugar

1 1/2 cups oil

3 eggs

1/4 cup orange juice

1 tsp vanilla extract


Mix together well; then add to wet ingredients

3 cups plain flour

1 tsp baking soda

1 tsp cinnamon

1/4 tsp salt


To the batter add:

1 Granny Smith apple, peeled and cut into small cubes

1 cup chopped nuts (I usually use walnuts)

1 cup coconut


Glaze:

2 cups powdered sugar

1/2 cup orange juice


Pour batter into a well-greased tube pan.  Bake in a preheated 325 oven for 1 hour and 20 minutes. Immediately pour glaze over cake (while still in pan) as soon as it comes out of the oven.  Let it rest in the pan for 15 minutes. Invert, then invert again onto a serving plate.
